Ingredients

Dry ingredients
  • 270 g oats
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1/2 tsp ground nutmeg
Wet ingredients
  • 2 bananas (large, ripe)
  • 2 eggs (large)
  • 360 ml oat milk
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup (optional)
Other
  • coconut oil (to grease the baking tray)
  • 40 g chopped walnuts
Optional toppings
  • nut butter
  • berries
  • yoghurt
  • chocolate spread

Method

  1. Preheat the oven to 180°C, fan setting.
  2. Grease a muffin tray with the coconut oil.
  3. Mix the dry ingredients in a bowl.
  4. Mash the bananas in a separate bowl and add the remaining wet ingredients to them. Stir through with a spoon.
  5. If the bananas are nice and ripe you shouldn’t need to add a sweetener, but for those with an extra sweet tooth, feel free to add a tablespoon of maple syrup.
  6. Combine the wet and dry ingredients mixtures and stir until they are thoroughly mixed.
  7. Spread the mixture evenly between the muffin moulds and top with the chopped walnuts.
  8. Bake in the oven for 25 minutes, until golden.
  9. Once ready, remove from the oven and leave the muffins in the tray while they cool down a bit.
